When experimenting with wing blur (i.e. intentionally using slow shutter speeds), you need to manage the amount of light coming in to avoid overexposure. This means reducing your ISO to near minimum and stopping down your aperture. Shooting in full manual mode allows me to set all these three parameters to achieve this effect.
